BERRY & VANILLA CHIA PUDDING TOPPED WITH A GREEN SMOOTHIE

Layering my food is one of my favourite ways to eat breakfast! It’s like you get the best of both words – a little chia pudding, plus a green smoothie 🌿 I always feel so good every time I eat something green and try to make sure I include some leafy green vegetable in at least (very minimum) one meal a day. Adding spinach to a smoothie surprisingly isn’t as disgusting as you might first think. Start off small and then work your way up! Honestly though, I can hardly taste it anyway blended with all the other delicious ingredients 🙌🏼 if you don’t particularly like to layer your food, you can still make either one of these recipes but just enjoy them separately on different days.

BERRY & VANILLA CHIA PUDDING (serves x 2).

✦ 1 cup of almond milk.

✦ 1/4 cup of chia seeds.

✦ 1 tbs of maple syrup (or other sweetener).

✦ 1 tsp of vanilla bean paste.

✦ 2 tsp of Tropeaka immunity powder.

Add all ingredients to a mason jar and stir until combined. Put the lid on the jar and give it a little shake. Place in the fridge overnight. The next morning give the chia pudding a good stir then top with whatever you like!

GREEN SMOOTHIE ✦ 1/2 a large frozen banana.

✦ 1/2 cup of almond milk (adjust this to your preference for consistency).

✦ 1 pitted medjool date.

✦ 1 handful of frozen spinach.

✦ 1 Tbs of Born Cultured Coconut yoghurt.

Add all ingredients to a high speed blender (I use a vitamix) and blend until completely smooth. Layer the chia pudding in a glass, pour in the green smoothie and top it with raw cashews & Loving Earth caramelised buckinis clusters. So healthy & delicious 🌿🙌🏼.
