HEALTHY VEGAN PANCAKES

Pancakes make me so happy!!! Do they do the same for you? I honestly haven’t made them in such a long time because, as usual, life gets busy and other areas of my life need to take priority for a while. I can’t even tell you how excited I was for the university semester break to commence, as I have been craving pancakes forever and knew that I would finally have the time to make them! They actually don’t take very long to make at all, it’s just the cleaning up part which is most time consuming.

Anyway, I actually have a lot of different pancake recipes in my bank of recipes (hoping to post more ASAP) but on this particular day I felt like some simple, yet delicious healthy vegan pancakes. For a change, I made these pancakes without using any protein powder, and instead just used all natural and easy to digest ingredients. They were the FLUFFIEST pancakes I’ve even made and tasted so good!! I hope you all enjoy them as much as I did if you make them!! ♡

INGREDIENTS

1 cup of spelt flour.

1 ripe banana.

3 tsp of Natvia sweetner .

1 & 1/2 tsp of baking powder.

1 tbsp of melted coconut oil.

1 & 1/4 cups of almond milk (or milk of choice).

✦ pinch of salt.

METHOD

Mix all dry ingredients together in a bowl. Blend all wet ingredients in a high speed blender. Pour the wet ingredients into the dry and mix to combine. Heat a little coconut oil in a fry pan and spoon batter onto the pan (as small/big as you want the pancakes to be) and cook on medium heat until bubbles form, then flip and cook for another minute or so. Layer pancakes on top of one another and add any fruit, nut butters, caramelised buckinis, puffed quinoa etc., then drizzle with pure maple syrup 👌🏼.
