If there is one thing I can’t change about myself, it’s my snacking!! I just simply can’t survive on three meals a day (i.e. breakfast, lunch and dinner) as I get wayyyy too HUNGRY. My day also starts very early and ends quite late at night, so I am awake for many hours and thus, need food. It’s no secret that I love to eat good food so these protein ball get my tick of approval because they not only taste AMAZING but have other benefits as well.
One tip I have learnt on my fitness journey is the importance of eating wholesome foods which not only nourish your body, but tend to keep you fuller for longer. This is why I aim to include some type of protein in all my meals. I don’t want to be hungry only one minute after eating something and then have to battle with myself to avoid reaching for something else to satisfy my cravings. So based on my experience and advice provided my favourite nutritionist bloggers’, PROTEIN is the key!!
These protein balls are big enough to make you feel like you are eating something substantial, yet don’t leave you feeling sluggish or guilty for having a snack. I usually try to have this snack with a tea (it’s mountain tea at the moment) at around 4pm. That way I can look forward to having a break from my work (when I work from home) and it ties me over until dinner. This is just what I do, but you might have a more preferred time when you know you need a snack.
The best thing about these protein balls is that they are HEALTHY! Yes they are a treat and you should try to have only one a day, but nonetheless they have no refined sugar, are dairy free, gluten free and can be made vegan! My husband absolutely loves it when I make these protein balls as snacks, so I have no doubt in my mind that if you try these you will LOVE THEM too!!!
This recipe makes about 12 large balls. I keep mine if the freezer because I prefer them really dense and hard, but it’s just personal preference ☺︎ If you do keep them in the freezer though, you might want double the batch because they last much longer!
✦ 2 scoops of Happy Way salted caramel protein powder (If vegan – just substitute for a plant based protein 🌱)
✦ 6 pitted medjool dates
✦ 1/2 cup of shredded coconut
✦ 1 cup of roasted cashews (NOTE: you can buy these roasted or alternatively roast your own)
✦ 1/2 cup of Loving Earth caramelised buckinis clusters
✦ 1/4 cup of cold water
✦ 1/4 tsp of Himalayan salt
✦ 1/2 cup of desiccated coconut (for rolling balls in)
✦ Add the protein powder, medjool dates, roasted cashews, water, salt and shredded coconut to a food processor (I use a Kitchen Aid – best investment ever!) and mix until the mixture becomes sticky and begins to combine.
✦ Transfer to a mixing bowl and stir through the caramelised buckinis clusters.
✦ Take about a tbs of the mixture and roll into a ball – repeat this step until all the mixture has been used up. You can then roll the balls in the desiccated coconut and place them in a container to store them in either the fridge or freezer. ENJOY!!
